SALT AND PEPPER CHICKEN
Salt and Pepper Chicken
Ingredients
2 lbs boneless skinless chicken thighs
1/2 cup cornstarch
1 red bell pepper, sliced
1/2 onion, sliced
5 garlic cloves, minced
5 green onions, sliced, white and green parts separated
Salt and coarse ground pepper
Directions
Slice chicken thighs into small bite sized pieces. Season well with salt and pepper. Combine with cornstarch and toss to coat.
Heat 1/2 cup of oil in a pan over medium high heat. Cook chicken in 2 batches, about 3 minutes per side. Remove and set aside.
Remove all of the oil and little bits from the pan. Add about 1 tablespoon of the used oil back to the pan.
Add bell peppers, onions, white parts of the green onions and cook for 2 minutes.
Add garlic, seasonwith salt and pepper, and cook for another 1 1/2 minutes.
Remove from heat and place chicken over the veggies. Give everything another seasoning of salt and pepper and sprinkle over green parts of onions.
