BEEF AND POTATO FOIL PACKETS

Beef and Potato Foil Packets has juicy ground beef patties with tender carrots and potatoes. It really is comfort in a packet and such a fun meal to make!

Beef Foil Packets

Ingredients
1 1/2 lbs ground beef
1/3 cup panko breadcrumbs
2 eggs, beaten
2 tablespoons Worcester sauce
1 1/2 teaspoons garlic powder
1 1/2 teaspoons salt
3/4 teaspoon pepper

2 large potatoes, small diced
8 oz baby carrots (1/2 a of 1 lb bag), sliced in half
1 onion, sliced
Olive oil
8 pepperoncinis + 4 tablespoons brine liquid
4 tablespoons butter, sliced

Directions
Preheat oven to 375 degrees.
Combine ground beef, breadcrumbs, eggs, Worcester sauce, garlic powder, salt and pepper. Divide mixture into 4 equal patties.
Lay out 4 sheets of foil and fold in half.
Divide potatoes into 4 portions and place them next to the folded edge of the foil. Season well with salt and pepper.
Place carrots and onions over potatoes and season again with salt and pepper. Drizzle over olive oil.
Place beef patty over the veggies and top each with and 2 pepperoncinis, 1 tablespoon of brine liquid and a tablespoon of butter.
Fold the foil over and crimp the edges to seal the packet.
Place packets onto a baking sheet and bake for 45 minutes or until potatoes and carrots are tender.
