Ingredients:
• 2–3 lbs collagen-rich bones
• 2 celery stalks
• 2 carrots
• 1 medium onion, quartered
• 2 garlic cloves, smashed
• ½ to 1 tbsp salt (to taste)
• 2 tbsp apple cider vinegar
• 1 tsp black peppercorns
• 1 bay leaf

Step 1: Source Your Bones

Choose high-quality, preferably organic or grass-fed collagen-rich bones.

Step 2: Blanch the Bones
1. Place bones in a large pot and cover with cold water.
2. Bring to a boil, then reduce heat and simmer for 20 minutes.
3. Skim off any foam or impurities that rise to the top.
4. Drain and rinse the bones thoroughly.

1. Preheat your oven to 450°F (230°C).
2. Spread bones on a parchment-lined baking sheet.
