Betty's Big Mac Chicken Smashed Tacos on the Blackstone Griddle
Betty's Big Mac Chicken Smashed Tacos are the ultimate family-style favorite—packed with all the classic flavors you love, minus the bun. With seasoned ground chicken, melty cheese, crunchy pickles, and homemade Mac sauce, these tacos are a smash hit every time.

Ingredients
For the Tacos
1 lb ground chicken
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
Salt and pepper, to taste
6 small flour tortillas
6 slices American cheese
Shredded lettuce
Sweet onion, finely chopped
Dill pickles, finely chopped
Sesame seeds (for garnish)
For the Big Mac Sauce
½ cup Duke’s Mayonnaise
¼ cup ketchup
¼ cup yellow mustard
1 tbsp white vinegar
¼ cup dill pickles, finely chopped
¼ cup sweet onion, finely chopped
½ tbsp paprika
Salt and pepper, to taste
Directions
1. In a bowl, mix together all the Big Mac sauce ingredients and set aside.
2. In another bowl, season the ground chicken with paprika, garlic powder, onion powder, salt, and pepper. Spread an even layer of the seasoned chicken onto one side of each flour tortilla.
3. Heat a lightly oiled griddle over medium heat. Place the tortillas meat-side down and cook for about 3 minutes until the chicken is browned. Flip the tortillas and top each with a slice of American cheese. Cook for another 1–2 minutes, until the cheese is melted and the chicken is fully cooked.
4. Transfer the tacos to a taco rack. Top each with shredded lettuce, chopped pickles, chopped onion, a generous drizzle of Big Mac sauce, and a sprinkle of sesame seeds.
