Paul and Sacrifices in Acts 21

In order to prove that he wasn't teaching against the Law of Moses or circumcision, James and the other elders at Jerusalem had Paul bring sacrifices to the Temple and pay for other men to do so also. If the Apostles didn't see anything wrong with making sacrifices after Yeshua's death and resurrection--I guarantee they knew more about it than you do!--how do the Levitical sin and trespass sacrifices fit into the New Covenant?
