Compare Grains and Grit to Lovely Bell Bakes sandwich bread recipes. I have baked the Grains and Grit recipe before and really have enjoyed the recipe. The Lovely Bell Bakes recipe was recommended by many, many people so I enjoyed trying it out.

Grains and Grit Recipe that I used-I scaled her recipe to fit my need and changed the ingredients to grams
355 grams warm water
63 grams honey
470 grams Fresh Milled Flour (I used 50% hard red and 50% hard white wheat berries to make my flour)
**Mix, cover and hydrate 30 minutes
7 grams salt
41 grams olive oil
12 grams yeast
**Knead 8-10 minutes
Cover and let rest and rise 45-60 minutes
**Shape into a loaf, place in a prepared 9x5 inch loaf pan. Cover with a tea towel and let rise until it reaches 1-2 inches above the side of the pan
**Bake in a pre-heated 350ºF oven 30-40 minutes. Make sure the internal temperature reaches 200ºF
**Cool on a cooling rack and enjoy. Freezes well

Lovely Bell Bakes
Recipe I used scaled to my needs with a 9x5 inch pan
395 grams warm water
62 grams honey
528 grams FMF (I used 50% hard red and 50% hard white wheat berries)
22 grams Vital Wheat Gluten
11 grams sunflower lecithin
**Mix and let hydrate, covered, 30 minutes
41 grams olive oil
13 grams salt
11 grams yeast
**Knead 8-10 minutes, cover and let rise for 45-60 minutes
**Shape into a loaf, place in a prepared 9x5 inch loaf pan. Cover with a tea towel and let rise until it reaches 1-2 inches above the side of the pan
**Bake in a pre-heated 350ºF oven 30-40 minutes. Make sure the internal temperature reaches 200ºF
**Cool on a cooling rack and enjoy. Freezes well
