FISH TACOS
Fish Tacos
Ingredients
For The Fish
1 1/2-2 lbs Cod
1 smoked teaspoon paprika
1 teaspoon chili powder
1 teaspoon garlic powder
Oil
Lime juice
For the chipotle sauce
2/3 cup mayo
2-3 (canned) chipotles in a adobo sauce, adjust according to spice level
1 tablespoon honey
To Serve With
Tortillas
Shredded cabbage
Pico de gallo or diced tomatoes
Directions
Preheat oven to 400 degrees.
Combine chili powder, paprika, and garlic powder together in a small bowl.
Place fish onto a baking dish. Season well on both sides with salt, pepper and seasoning mix. Drizzle over olive oil.
Bake for 15 minutes or until cook fish has cooked through. Squeeze lime juice over the top.
While fish is baking make the chipotle sauce. Place mayo, chipotle peppers, and honey in a food processor or blender. Blend until smooth consistency.
Season diced tomatoes or pico de gallo with salt.
To assemble the tacos
Place shredded cabbage over a tortilla and place chunks of cod on top. Drizzle with chipotle sauce and top with pico de gallo or diced tomatoes.
