**Pumpkin Oat Muffins**
• 3 cups oat flour
• 1.5 cups canned pumpkin
• 1.5 cups egg whites
• ¾ cup water
• 1 Tbsp avocado oil
• 1 Tbsp apple cider vinegar
• 2½ tsp baking powder
• 3 tsp cinnamon
• 1 tsp molasses
• 1 tsp vanilla extract
• ⅜ tsp Pure Stevia Powder or 1/2 cup sugar
• 1/3 tsp ground cloves
• 1/3 tsp salt
• Cinnamon & sugar for topping

→ Blend everything smooth, bake at 375°F for 18 mins in greased muffin tins (no liners).

**Chicken and Rice Soup**
• 2 bags frozen cauliflower (16 oz each)
• 2.5 quarts chicken broth
• 3 cups carrots
• 3 cups celery
• 1 large onion
• 3 cups cooked rice
• 3 tsp mineral salt, black pepper
• 1½ tsp thyme
• 1/3 cup cottage cheese (or 3 oz cream cheese)
• 4 cups shredded cooked chicken

→ Blend cauliflower with broth, cream cheese, and seasonings. Simmer veggies separately, then combine everything and simmer 15 mins. Freezes well!

**5-Ingredient Pasta Sauce** (for 12 oz pasta)
• 4 Tbsp butter
• 3 garlic cloves (minced)
• 8 oz tomato sauce
• 4 oz cream cheese
• Salt to taste
