Scrumptious Walking Taco Casserole Recipe

This Walking Taco Casserole is a great Family Dinner, served with Corn Chips and a Salad.

Walking Taco Casserole
Ingredients:
1 lb ground Beef
1 cup Onions, chopped
2 tbsp Taco Seasoning (homemade or 1pkg bought)
1 - 14.5 oz diced Tomatoes with Green Chilies
2-3 tbsp Water
1 - 15 oz Whole Kernel Corn
1 - 15.5 oz Black Beans, drain & rinsed
1 Jalapeño, chopped
1 bag (9.25 oz) Corn Chips (Fritos)
10 oz Cheddar Cheese, shredded/divided
2 tsp Butter, divided

Toppings:
- shredded Iceberg Lettuce
- diced Tomatoes
- chopped Cilantro
Sour Cream

Butter Casserole Dish (11.5"x8"x2") set aside.
Heat 1 tsp Butter in Skillet on high Heat, brown Beef. (Note: if there is to much Liquid, remove)
Add Onions, cook until translucent.
Season with Taco Seasoning, stirring.
Add diced Tomatoes, Water, Corn, Black Beans & Jalapeño, combine well.
Cook until thickened.
Preheat Oven 350°F.
Place a layer of Corn Chips in prepared Casserole Dish.
Top with half the shredded Cheese.
Place Meat Mixture on top.
Top with the rest of Cheese.
Cover with Foil.
Bake 15 Minutes, remove Foil & continue baking for 5-8 Minutes.
After a short Rest, top with Lettuce, Tomatoes, Sour Cream & Cilantro.
Serve with the rest of Corn Chips.
