🌮 Recipes – Baked Chicken Fajitas 🌶️
These Baked Chicken Fajitas are a quick, flavorful, and healthy dinner idea that comes together in just one pan! Juicy chicken, colorful bell peppers, and bold Tex-Mex spices baked to perfection — perfect for a busy weeknight meal.
✅ Ingredients:
1 lb (450g) boneless, skinless chicken breasts, sliced into thin strips
3 bell peppers (red, yellow, green), sliced
1 medium red onion, sliced
2 tablespoons olive oil
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes (optional)
Salt and black pepper to taste
Juice of 1 lime
Fresh cilantro (optional, for garnish)
Warm flour tortillas, for serving
👩🍳 Instructions:
Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine sliced chicken, bell peppers, and onions.
Drizzle with olive oil and add all the seasonings (chili powder, cumin, paprika, garlic powder, onion powder, red pepper flakes, salt, and pepper). Toss to coat everything evenly.
Spread the mixture on a large baking sheet in a single layer.
Bake for 20–25 minutes, or until the chicken is cooked through and the veggies are tender.
Remove from the oven and squeeze fresh lime juice over the top.
Serve hot with warm tortillas, and top with fresh cilantro if desired. Add sour cream, guacamole, or shredded cheese if you like!
💡 Tips:
For extra char, broil for the last 2–3 minutes.
Great for meal prep — store in airtight containers for up to 3 days.
Make it low-carb by serving in lettuce wraps or over cauliflower rice.
