Chicken Za'atar

Za'atar Chicken is a flavorful Middle Eastern dish that highlights the earthy, tangy, and slightly nutty taste of za’atar, a spice blend typically made with dried thyme, oregano, sumac, and sesame seeds.
Ingredients:
â…“ cup lemon juice
4 cloves garlic, finely chopped
2 tablespoons za'atar
½ teaspoon sea salt
¼ teaspoon black pepper
¼ cup olive oil
1 tablespoon tahini
2 pounds boneless, skinless chicken thighs
Fresh parsley, chopped (for garnish)

In a large bowl, whisk together the lemon juice, chopped garlic, za'atar, sea salt, black pepper. Slowly whisk in the olive oil until the marinade is well combined. Remove ¼ cup of the marinade and place it into a separate small bowl. Stir in the tahini until it is fully incorporated and has a runny consistency. Set aside for later. Add the marinade to the chicken and for the best flavor, allow the chicken to marinade for at least 2 hours.
Spread the chicken out onto the prepared baking sheet. Sprinkle the remaining tablespoon of za'atar on the chicken. You could even sprinkle some chopped fresh thyme on top of you'd like.
Bake in a preheated 400F oven for 35-45 minutes or until the internal temperature registers 165ºF.
