Chocolate Chip Ice Cream Sandwich Bars

Homemade Chocolate Chip Ice Cream Sandwiches are LOADED with CHIPS and SO GOOD!
Chocolate Chip Cookie Wafer Recipe
1 Cup, 200 grams, Firmly Packed Light Brown Sugar
1/3 Cup, 5 1/3 TBSP, Melted Butter
1 Tsp Vanilla Extract
2 Large Eggs, slightly beaten
1 Cup, 120 grams, AP Flour
1/2 Scant Tsp Salt
1/2 Scant Tsp Baking Powder
1 Cup, 170 grams, Semi-sweet Chocolate Chips
1 Quart, 0.95 Liter, Vanilla Ice Cream

Mix first four ingredients. Combine the Flour, Salt, and Baking Powder. Blend with wet mixture. Fold in Chocolate chips.
Divide the cookie dough in two parchment-lined and greased square pans, 8x8 inches (20cm x 20 cm) or 9x9 inches
Spread dough evenly and into corners of pan.
Bake at 350F for 14 to 15 minutes, DON'T OVERBAKE
Cool cookies in the pans for 10 minutes.
Remove Cookies and cut each into 8 bars. Let cookies completely cool on wire racks.
Refrigerate or Freeze Cookies for at least one-half hour prior to assembling the Ice Cream Bars.
