Ingredients
8 eggs
¼ cup half and half
1 lb ground breakfast sausage
8 flour tortillas
1 block cheddar cheese, hand-shredded
Blackstone Lumber Jack Seasoning
2 tbsp butter
¼ cup fresh cilantro, chopped
Cholula Chili Garlic Hot Sauce

Directions
1. Preheat the griddle to medium-low heat. Add the ground breakfast sausage, breaking it apart as it cooks. Once fully cooked, slide the sausage to the side of the griddle to keep warm.

2. While the sausage is cooking, whisk together the eggs and half and half in a mixing bowl. Swirl the butter onto a clean section of the griddle over low heat. Pour the egg mixture onto the griddle and use a spatula or scraper to gently move the eggs around as they scramble. Season with Blackstone Lumber Jack Seasoning. Cook the eggs until almost set, then slide them aside.

3. Place the flour tortillas on the griddle. Layer each tortilla with shredded cheese, scrambled eggs, sausage, and another sprinkle of cheese. Add a dusting of Lumber Jack Seasoning on top. Once the bottom of the tortillas are crisped to your liking and the cheese has melted, remove them from the griddle.

4. Place the assembled tacos in a Blackstone Taco Rack for family-style serving. Finish with fresh cilantro and a drizzle of Cholula Chili Garlic Hot Sauce.
