Keto Beef and Cauliflower Curry

Good day and welcome back to the channel! Today, we've got the next installment of the series, cauliflower that doesn't suck. To achieve this goal today, we're going to envelope the cauliflower in ground beef and a delicious red curry sauce. It's tasty!

Ingredients:
1.3 lb ground beef (80/20)
1 lb cauliflower, broken up into small pieces and steamed until tender crisp
3 cloves garlic, peeled and squished
1 jalapeno, fine diced
~ 10 g fish sauce
~ 45 g soy sauce
~ 5 g fresh ginger grated fine
~ 30 grams red curry paste
1 onion, diced
1 can (400 ml) coconut milk

Toppers:
Fresh cilantro, rough chop
Scallion, fine slice
sesame oil to drizzle over top.

Mis en place! Get your ingredients all prepped and together!

Start heating a large saute pan. Add ground beef and cook until most of the way done. Add onion and combine, stirring regularly. Cook another 3-4 minutes. Add garlic, jalapeno and let flavors bloom a bit before mixing everything together. Add the ginger. Add the fish sauce, soy sauce and curry paste. Stir until everything is combined and completely incorporated. Add cauliflower and stir until thoroughly combined.

Serve while hot and top with some fresh cilantro, scallion, and some sesame oil. Delish!

NOTE: If you enjoy heat, add more curry paste and more jalapeno. If you want less heat, omit the jalapeno.
