Griddled Pound Cake with Fresh Strawberries | Blackstone Griddles
Strawberries, sugar, and pound cake come together in the ultimate summer dessert. Hussey shows how to toast up golden slices and load them with juicy macerated berries right on the Blackstone griddle.

Ingredients
1 lb fresh strawberries
½ tsp salt
½ cup sugar (adjust to taste)
Juice of ½ lemon
2 tbsp butter
Pound cake or angel food cake, sliced
Whipped cream
Fresh mint (optional, for garnish)
Directions
1. Wash and hull the strawberries. Slice them into even pieces and place them in a medium bowl.
2. Add salt, sugar, and lemon juice to the sliced strawberries. Mix thoroughly. Let the mixture sit for at least 30 minutes to allow the flavors to develop and juices to release.
3. Set your griddle to low heat.
4. Slice the pound cake or angel food cake if you haven’t already. Melt the butter on the griddle, then place the cake slices on top. Toast each side for 2–3 minutes until golden brown.
5. Place the toasted cake on serving plates. Spoon the macerated strawberries (with their juices) over the cake slices. Add a generous dollop of whipped cream on top.
6. Finish with a sprig of fresh mint for garnish, if desired. Serve immediately and enjoy!
