Pork Steaks and Bacon Fried Cabbage on the Blackstone Griddle
Pork steak doesn't always get the love it deserves, but Hussey shows that when it is cooked right on the Blackstone it becomes a total game changer. Paired with bacon fried cabbage and finished with a tangy apple cider vinegar kick, this Southern style meal is all about bold flavor and down home comfort.

Ingredients
6 pork steaks (about 1” thick)
½ head of cabbage, chopped into bite-sized pieces
12–16 oz bacon, chopped
2–3 tbsp Blackstone Essentials Blend
1–2 tbsp Blackstone Outlaw BBQ Seasoning (or your favorite rub)
1 tbsp apple cider vinegar
BBQ sauce (optional, for finishing)
Directions
1. Preheat your griddle to low heat.
2. Season the pork steaks on both sides with the Blackstone Essentials Blend and Outlaw BBQ Seasoning. Let them rest at room temperature for about 15 minutes.
3. While the griddle is heating, chop the bacon and place it on the griddle. Cook until the fat renders and the bacon begins to crisp.
While the bacon cooks, chop the cabbage into bite-sized pieces.
5. Once the bacon is rendered, move it to a cooler zone of the griddle. Add the cabbage to the bacon fat, season with Essentials Blend, and cook for 5–6 minutes until slightly softened. Move the cabbage to a cooler area to rest.
6. Place the pork steaks on the hot side of the griddle and grill, flipping every 2–3 minutes, until they are browned and reach an internal temperature of about 180°F.
7. Move the pork to a cooler area of the griddle. Slide the cooked cabbage into the area with the pork drippings and bacon. Add the apple cider vinegar and stir thoroughly to deglaze the griddle and combine all the flavors.
8. Serve hot and enjoy!
Optional
For a saucy finish, place the pork steaks in an aluminum pan with a bit of BBQ sauce. Cook on the griddle, flipping every minute for about 10 minutes, until the sauce reduces, thickens, and becomes sticky.
