Nothing changes about the way we see the world. All the angles to celestial lights above the horizon at any time and location used to describe the globe model are accurate for flat earth too. The difference is our perception. The horizon is our eye level when we look straight ahead across the earth's horizontal surface. Our height above the surface of flat earth determines the distance we can see clearly across the surface to the horizon.
