Fresh Milled Flour Bread so simple you can make it on Vacation

Cutting back on processed food and trying to save money by making foods from scratch as much as possible.

490 grams hard wheat flour (or a mix of several hard wheats)
355 grams water
63 grams honey or 100 grams sugar
2 Tablespoons vital wheat gluten
2 Tablespoon milk powder
**Mix until all the flour is damp, cover and let hydrate 20 minutes
54 grams oil (I used olive oil)
1 teaspoon salt
2 1/4 teaspoon instant yeast
**Knead with a mixer 10 minutes or by hand 15 minutes
**Cover and let rise 45-60 minutes
**Shape into a loaf and place in a 9x5 greased or parchment lined pan. Cover and let rise 45-60 minutes
**Bake in a preheated 350ºF/180ºC for 35-40 minutes. Make sure the internal temperature reaches 190ºF-200ºF
**Cool on a cooling rack before slicing

To take on a trip, grind the wheat and combine with milk powder, suger and Vital Wheat Gluten. Place in an air tight container or vacuum sealed pouch. When you are ready to bake just add water to hydrate for 20 minutes. After 20 minutes add oil, yeast and salt. Hand knead if you don't have a mixer available. Knead 15 minutes and continue on from there.
