How to make Delicious Pear Ricotta Muffins

Pear Ricotta Muffins are so delicious, it's a must try Recipe, great for Breakfast, Brunch, Potluck or Picnic just to name a few.

Pear Ricotta Muffins
Ingredients:
2-15 oz sliced Pears, divided & reserve Juice
1-3/4 cups Flour
1 tsp Allspice
1-1/2 tsp Baking Powder
1/2 tsp Salt
1/2 tsp Baking Soda
1/4 cup Butter, soft
1 cup Ricotta Cheese
Zest of a Lemon
1/4 cup Sugar (more to sprinkle)
1/2 cup Brown Sugar
2 Eggs, roomtemp
2 tsp Pear Juice

Set aside 12 Pear Slices.
Dice the rest of Pears.
Preheat Oven 425°F.
Place Muffin Liners in Tin.
Combine Flour, Allspice, Baking Powder, Salt & Baking Soda, whisk well and set aside.
Cream together Butter, Ricotta Cheese and Lemon Zest.
Add Sugar and Brown Sugar.
Mix in Eggs one at a time & Pear Juice.
Scrape down sides of the bowl.
Incorporate Flour Mixture in batches.
Scrape down sides of bowl.
Fold in diced Pears.
Equally fill each Muffin Liner with Batter.
Top each with a slice of Pear.
Sprinkle with Sugar.
Bake 5 Minutes, lower heat to 375°F.
Continue baking for 18-20 Minutes or until tester comes out clean.
Rest in Tin for 2 Minutes.
Cool completely on Wire Rack.
