Keto Ginger Beef

Good day and welcome back to the channel! Today, we've got a beef dish that highlights an awesome flavor combination: ginger + beef = happy (for me anyway). This is a simple dish to make that's not only keto, but it's perfect for meal prep!

Marinade that I did (it's all very flexible...you can add or modify as you see fit, as long as there is a sweet, salty, umami, and some oil, you'll be fine)
~ 2 - 3 tablespoons fresh ginger
~ 2 - 3 3 cloves garlic squished
~ 2 tablespoons vinegar (rice preferred)
~ 2 tablespoons of golden monkfruit sweetener
~ 2 tablespoons Coconut aminos
zest from a clementine/tangerine/mandarin (I used a Cutie)

This marinade will work for ~ 1 lb of beef.

Process: break down flank steak in ~ 1/4 inch slices. Then cut into bite sized pieces.
Mix up marinade. Place prepped beef into marinade mix and let soak for a couple hours to overnight.

Cook flank steak in a hot skillet and serve topped with some diced scallions. Enjoy! And, let me know what you think in the comments below!
