Homemade Grape-Nuts Cereal with Fresh Milled Flour

Homemade Grape-Nuts are tasty and can be modified to suit your own tastebuds.
3 1/2 c Fresh Milled Soft White Wheat Flour (396g)
1/2 cup Barley Malt Syrup (160g)
1 1/2 teaspoon salt (9g)
1 1/2 cups buttermilk or milk (363g)
1 teaspoon baking soda (4g)
1/4 cup Sucanat or brown sugar (50g)

**Add more brown sugar if you desire a sweet cereal, add cinnamon or other spices if you desire more flavor. Start small, maybe 1/2 - 1 teaspoon of spice. Pumpkin Pie spice in the fall would be good too

Mix and pour the batter on a parchment lined or silicone mat lined large baking sheet. Do not worry about what it looks like as this will be crumbled up after the first bake

Bake in a 350º/175ºC oven for 35 minutes

Let cool completely on a baking rack, after it has been removed from the pan and parchment/silicon mat (about 20-30 minutes)

Bread into smaller pieces and grate with a cheese grater to help crumble into tiny pieces. Can use a food processor with a cheese grating blade, hand held cheese grater or cutting board and knife. If pieces are large they will dehydrate and be hard as a rock, so keep the pieces small. Under 1/4 inch cubed.

Place the crumbles on two large baking sheets and place in an oven set to 250ºF/120ºC for 90 minutes. Take trays out one to three times during the dehydration process and stir the cereal to help evenly dehydrate

Cool completely before adding to jars or bags that are air tight.

I will double this recipe next time as it takes a while to make and it is really tasty. Love adding it to my yogurt to make a delicious lunch. Add to the top of ice cream for a crunch and of course eat as a cereal with milk. Hot milk in the winter will warm you up.
