This Recipe is for four individual Crustless Quiche with Mushrooms and Spinach. It can be served for Breakfast, Brunch, Lunch or as a light Dinner with a Salad on the side.

Individual Crustless Mushroom Spinach Quiche
Ingredients:
6 Eggs
1-1/2 cups Half & Half
8 oz Mushrooms (assortment) sliced
1-1/2 tbsp Butter, plus more
1/2 cup Onions, diced
1/4 tsp Salt
3 Pinches Pepper, divided
1-1/2 tsp Oregano
2 tbsp Parsley, chopped & divided
1 cup Spinach, frozen/ thawed
3 oz Cheddar Cheese, shredded

4 - 5.5" Ramekins

Heat Butter in Skillet.
Sauté Mushrooms and season with a Pinch of Pepper.
Add Onions, sauté & season with Pepper.
Incorporate half of the Parsley & Spinach, set aside.
Generously butter each Ramekin.
Preheat Oven 350° F.
Combine Eggs, Salt, Pepper, Oregano rest of the Parsley & Half & Half, whisk well.
Place Ramekins on Baking Sheet.
Divide & spread out Mushroom/Spinach Mixture in the Dishes.
Sprinkle with Cheddar Cheese.
Pour Egg Mixture over everything.
Bake 30-32 Minutes, or until set.
