Plot to Pantry: Harvesting & Canning Enough Food To Feed Our Family

Join us for a day of harvesting and canning enough food to feed our family for the year. We’re picking fresh tomatoes, potatoes, and raspberries from our garden, plus turning a generous gift of cucumbers into a year’s worth of pickles. We’re also transforming unwatered courgettes into delicious, moorish brownies.

Recipes:

Easy Garlic Dill Pickles Recipe
This straightforward recipe for crunchy garlic dill pickles uses the low-temperature pasteurisation method to ensure maximum crispness. Ideal for beginners and experienced preservers alike, these pickles are a fantastic addition to your home preserving skills. Follow along for a tasty, shelf-stable treat!
Ingredients
Salt Brine (for soaking)

90 g salt (preferably non-iodised, such as sea salt)
1 litre warm water
Cold water (to fill a 7.5-litre container)

Pickle Brine (for preserving)

2 litres filtered or distilled water
1.5 litres vinegar (5% acidity, pasteurised)
60 g salt (preferably non-iodised, such as sea salt)
50 g caster sugar
1 tablespoon pickling spices (store-bought or a mix of black peppercorns, mustard seed, coriander seed, dill seed, allspice berries, red chilli flakes, and bay leaves)

Jar Ingredients (per 500 ml jar, 8 jars total)

3.6 kg pickling cucumbers
1 clove garlic
1 teaspoon mustard seed
1 teaspoon fresh dill leaves (or dill seed)

canned at 82-85C for 30 minutes (adjust for elevation)

Roasted whole tomatoes

canned 35 minutes at a rolling boil. (adjust for elevation)

Courgette brownies:

• 1/2 cup browned liquid butter
• 1 cup cane sugar
• 1 teaspoon of vanilla
• 2 cups plain flour
• 1/2 cup cocoa powder
• 1/2 teaspoon baking soda
• 1 teaspoon salt
• 3 cups finely shredded courgette, patty pan, whatever you have (DO NOT DRAIN)
• Chocolate chips (as many as you want)
