How To Handle Google (Gmail) on a De-Googled Phone?

This is a practical problem. Are you allowed to use Gmail in Thunderbird? What are the effects of having Gmail on the phone? What can be spied on by Google if you activate Gmail.

This assumes you never log in to any other Google app like Youtube.
