Cherry Vanilla Cake made from Fresh Milled Flour

Cutting back on processed food milling wheat to make my own breads and baked goods.

Cherry Vanilla Cake made with Fresh Milled Flour
Dry Ingredients:
2 cups soft white wheat flour (226g)
2 teaspoons baking powder (9g)
1/4 teaspoon salt (2g)
**Whisk and place off to the side

Wet Ingredients:
2 eggs
1 cup cane sugar (227g)
**Beat for at least 2 minutes
1/4 cup oil (54g)
2 teaspoons vanilla extract (9g)
1/4 cup milk (61g)
**mix well
--**Alternate adding the dry ingredients into the wet and:
1 cup sour cream (230g)
**mix adding about 1/2 of the sour cream, then 1/2 of the dry ingredients. Then add the second half of the sour cream, then the rest of the dry ingredients. DO NOT overmix

Add 1 1/4 cups drained cherries tossed with 1 teaspoon fresh milled flour or 1 1/4 cups fresh cherries tossed with 1 teaspoon fresh milled flour

-Pour into a greased 11x7 inch pan or square pan
-Bake in a preheated 350ºF/175ºC for 40-50 minutes, until a toothpick inserted in the center comes out mostly clean from the center of the cake
-Let the cake cool completely before frosting if desired.
-Cake will be good for 3 days, if not able to eat that quickly it will freeze well for up to 3 months.
