Smoked Chuckies!

It's almost fall, the weather is gorgeous, which for me means it's time to get the smoker going! Today, we're making smoked chuck roasts (AKA, chuckies).
This is a fabulous dish that is super easy to make. It's keto, it's meal prep, it's yummy! Also perfect to make in advance for a tailgate.

Ingredients:
~ 5 lb chuck roast
~ 1 cup favorite BBQ rub (I used Simply Marvelous Apple rub)
1 pint of beef stock
1 onion, sliced
~ 2/3 cup sliced banana peppers
~ 1/2 cup sliced pickled jalapeños

Process:
Dry brine beef for a couple hours (or overnight). Bring out from fridge to start getting it up to room temperature. Prep smoker (or, just use your oven) with temp of ~ 275-300 degrees. Dust beef with BBQ rub. If smoking, drop beef onto smoker rack and cook until internal temps reach ~ 160 degrees. Prep rest of ingredients. Once beef temps reach ~160, remove from smoker, place in a pan and add the rest of the ingredients. Seal pan with foil. Smoke/bake until internal temps reach ~ 203 degrees F.
Remove from cooker, slice/pull if falling apart, and enjoy!
For the sauce/gravy/cooking liquid: let cool, then remove the fat.
Add liquid back to the beef and enjoy!
