Chuck Roast Beef Tacos
is my favorite way to make tacos! The beef is seasoned with some taco seasoning and then cooked until it’s tender and falling apart. Served with some tortillas, a little guacamole and pico de gallo, it’s the absolute best!

Chuck Roast Beef Tacos

Ingredients
3-4 lbs chuck roast
2 packets taco seasoning
2 avocados
Lime
Tortillas

For the Pico de Gallo
1 lb tomatoes, diced
1/2 cup diced onions
1/2 cup chopped cilantro

Directions
For the chuck roast
Place Chuck roast into a slow cooker. Sprinkle over taco seasoning. Cook on high for 4-6 or low 8-10, or until beef is falling apart.
While beef is cooking prep pico de gallo and guacamole.
For the Pico de Gallo
Combine tomatoes, onions, and cilantro in a bowl and season really well with salt.
For the guacamole
Mash avocados and season with salt and lime juice to taste.
After the beef is through cooking, check seasonings and add salt to taste. Shred beef and place it onto a sheet pan. Spoon some of the sauce over the meat. Transfer to the oven and boil until ends are crispy, about 4-6 minutes. Make sure to keep an eye on it to prevent it from burning.
To serve, spread guacamole onto a tortilla, top with shredded beef, and sprinkle over pico de gallo.
