2+ Super Bowl Micro Cakes From Box Mix

Recipe is for 2 decent size, personal cakes, with leftover box mix for 6 more cakes! I did the math, and measured entire box mix. Don’t pack your measuring cups, keep the mix fluffy. Use a fork tip to gently flick or brush off excess from the top of your measuring cups and spoon. I don’t have 3/4 measuring cup. I use 1/2 cup and 1/4 cup. The extra 1 Tbsp is to have all the cakes similar in size, without having a last cake not be enough or having to figure out how much ingredients is needed. One box yields 8 of these microwaved cakes.

Ingredients:
One 15.25 OZ Great Value Deluxe Moist White Cake Mix (Again, you’ll have unused mix to make 6 more future cakes, 1 egg white for 2 cakes at a time. If you want 1 cake at a time, I believe that would be 6.5 Tbsp of this cake mix, you can adjust an egg white and rest of ingredients to half.

On with ingredients:
3/4 cup plus 1 Tbsp cake mix (store remaining cake mix in ziplock bag, inside the box).
5 OZ room temp water
1/8 cup OR 2 Tbsp of oil
1 lrg egg white
Optional 1 Tbsp any flavor chips for both servings (1/2 Tbsp each) Dark Chocolate used today.

With a fork, mix ingredients in large bowl, then divide batter into two very, lightly oiled soup bowls. Add choice of chips (dried fruit, sprinkles or nuts) to each bowl of batter.

Microwave one bowl at a time for 1 minute. Check if batter is wet in center, if wet, microwave additional 30 second increments until center appears dry. Use a toothpick, fork or knife to poke the center, if it comes out clean without batter, cake is done. These took nearly 2 minutes each. Carefully remove hot bowl to a cooling surface. Let cake sit 20-30 minutes before serving. Slide a silicone spatula or butter knife along the edges of the cake, it should release easily. Turn cooled bowl upside down onto your hand, then place on a serving plate.

If you prefer icing, ice cream, pudding, whipped cream, fruit or any other topping, give it a try. Frozen Strawberries, Blueberries or Peaches heated in a microwave just until warm, also tasty. Plain cake, or cold or warm toppings work. Another good one is vanilla pudding cool whip or whipped cream, shredded coconut and pineapple or just a sprinkle of powdered sugar or caramel or honey and nuts. This cake can also be made ahead of time. If you want to get more fancy, even with layers, prepare and chill it early in the day for dessert with dinner. Make sure it cools well and is removed from the bowl, or it could get soggy. If you plan on serving it right after it cools down, it can be served in the bowl that it was microwaved in.
