Blueberries & Lemons make a great combination, try this delectable Muffin Recipe. Serve for Breakfast/Brunch or Dessert with Coffee or Tea,

Blueberry Lemon Muffins
Ingredients:
Topping:
1 tbsp Brown Sugar
1 tbsp Sugar
1/4 tsp Nutmeg

Muffins:
11 oz Blueberries, set aside 36 Berries
1-3/4 cups Flour
1/2 tsp Salt
1 tsp Baking Powder
1/2 tsp Baking Soda
3/4 tsp Nutmeg
1/2 cup Butter, soft
Zest of a Lemon
2 tsp Lemon Juice
1/2 cup Sugar
1/4 cup Brown Sugar
2 Eggs, roomtemp
1/4 cup Sour Cream, roomtemp

Place Muffin Liners in Tin.
Preheat Oven 425°F.
Combine Topping Ingredients, whisk well set aside.
Combine Flour, Salt, Baking Powder, Baking Soda & Nutmeg, whisk well set aside.
Cream together Butter & Lemon Zest.
Add Sugar & Brown Sugar.
Mix in Eggs one at a time, Lemon Juice & Sour Cream.
Scrape down sides of bowl.
Incorporate Flour Mixture in batches, scrape down sides of bowl.
Fold in Blueberries.
Fill Muffin Liners with Batter.
Top with remaining Blueberries.
Sprinkle with Sugar Mixture.
Bake 5 Minutes, lower heat to 375°F.
Continue baking for 20-22 Minutes or until tester comes out clean.
Rest 2 Minutes in Tin.
Cool completely on Wire Rack.
