Battered chips

Ingredients:
4 large potatoes (peeled and cut into thick chips)
1 cup all-purpose flour
1 tsp baking powder
1 tsp turmeric (for the orange color)
1/2 tsp paprika
Salt to taste
1 cup cold water
Oil for frying

Peel and cut the potatoes into thick chips. Rinse the chips in cold water to remove excess starch!

Parboil the chips for about 8-9 minutes. Drain and let them cool.

In a bowl, mix the flour, baking powder, turmeric, paprika, and a pinch of salt. Gradually add the water until you have a smooth batter. It should be thick enough to coat the back of a spoon but not too runny.

Dip each chip into the batter, then carefully place it into the hot oil. Fry in batches to avoid overcrowding. Fry for about 4-5 minutes or until the chips are golden brown and crispy.

Remove the chips from the oil and place them on a paper towel to drain any excess oil. Sprinkle with salt while they’re still hot.
