Chocolate Peanut Cookies
Ingredients:
1-3/4 cups Flour
2 tbsp Cocoa Powder
1/2 tsp Baking Soda
1/2 tsp Salt
3/4 cup Coconut Oil, soft
3/4 cup Sugar + extra to sprinkle
1 Egg
1 tsp Vanilla
2 tbsp Peanut Butter
1 cup Honey Roasted Peanuts, halved

Combine Flour, Cocoa Powder, Baking Soda & Salt, whisk well set aside.
Cream together Coconut Oil & Sugar.
Add Egg, Vanilla Peanut Butter.
Incorporate Flour Mixture.
Fold in Peanuts.
Cover with Plastic Wrap & refrigerate 30 Minutes.
Preheat Oven 350°F.
Line Cookie Sheet with Baking Mat.
Shape equal sized Balls (approx 24-24gr. each)
Place equally spaced apart on Cookie Sheet.
Bake 9 -11 Minutes.
Sprinkle immediately with Sugar.
Cool completely on Wire Rack.
