Barbecue chicken and potatoes is a flavorful dish that combines tender bites of chicken and potatoes coated with a tangy barbecue sauce and topped with lots of melted cheese. This is a fun dish to make and one your whole family will love!

Barbecue Chicken and Potatoes

Ingredients
For the potatoes
2 large russet potatoes, diced into small pieces
1 1/2 teaspoons smoked paprika
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder

For the chicken
1 1/2 lbs chicken breast
1 1/2 teaspoons smoked paprika
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder

1 small red onion, sliced
1 cup barbecue sauce
1 1/4 cup mozzarella or Monterey Jack cheese
Optional - Chopped cilantro

Directions
Preheat oven to 400 degrees.
Place potatoes onto a baking sheet. Season with smoked paprika, garlic powder, onion powder, salt and pepper. Drizzle with oil and mix to combine.
Bake for 25-30 minutes or cooked through.
While the potatoes are baking cut chicken
into small bite size slices. Season chicken with smoked paprika, garlic powder, onion powder, salt and pepper.
Heat oil in a pan over medium high heat and sear chicken in 2 batches. Spread half of the chicken on the pan and let it sit for 2 minutes. Then flip/stir for another 1-2 minutes (about 3-4 minutes per batch). Remove and set aside.
At this point the potatoes should be almost through cooking.
Add more oil and sauté onions for 2 minutes.
Add chicken and cooked potatoes to the pan. Stir in barbecue sauce. Sprinkle over cheese, and either cover or place under broiler until cheese has melted. Sprinkle over chopped cilantro if desired.
