Meatball & Potato Stew is the ultimate comfort food! It has warm, hearty, tender meatballs and potatoes in a rich and flavorful broth. It really just feels like a hug in a bowl!

Meatball and Potato Stew

Ingredients
For the meatballs
1 lb ground beef
1/2 onion, grated
1 egg, beaten
1/3 cup Panko breadcrumbs
1 teaspoon salt
1/2 teaspoon pepper

1 onion, sliced
4 garlic cloves, minced
2 large Roma tomatoes, diced
2 teaspoons paprika
2 cups chicken broth
1 1/4-1 1/2 lbs gold potatoes , cut into small chunks

Directions
Preheat oven to 400° .
Combine all of the meatball ingredients together in a bowl. Roll mixture into 1 1/2 inch meatballs, about 12 meatballs total.
Place meatballs onto a baking sheet and bake for 20 minutes.
Meanwhile, while the meatballs are baking.
Heat oil in a pan over medium heat. Add onions and garlic and sauté for 2 minutes. Add tomatoes, season with salt, cover and cook for 3 minutes. Uncover and mash tomatoes with a spatula.
Add chicken broth and potatoes and season well with salt and pepper. Bring to a boil, then lower heat to medium low. Cover and
cook for 10 minutes.
Add cooked meatballs to the pan, cover and cook for another 5-10 minutes, until potatoes are tender.
