Slow Cooker Tex-Mex Beef Stew | Carne Guisada

Carne Guisada Recipe, a delicious Beef Stew simmered in TexMex spices!
3 1/2 pounds Chuck Roast, trimmed and cut into 1-inch cubes
2 TBSP Olive Oil, for sizzling beef cubes
2 Cups Chopped White Onion
2 Cups chopped Poblano Chilis
4 Large cloves Garlic, crushed
1 small bunch Cilantro stems chopped, or 1 1/2 Tsp Dried Cilantro
3 TBSP Flour
2 Tsp Cumin
2 Tsp Chili Powder
2 Tsp Dried Oregano
1 Dark Mexican beer, can omit and increase Beef Stock to 4 Cups
3 Cups Beef Stock
1 14.5 ounce can Diced Fire Roasted Tomatoes
2 TBSP light brown sugar
2 Tsp Salt
Black Pepper or Cayenne Pepper to taste
