Best Value Beef at Costco?
For me, that would be the beef chuck flat iron steaks! These babies are currently at Costco for $10/lb. They're amazing! Lovely, beefy and steaky flavor. For the one's that I've had, there's been zero waste (e.g., no big globs of connective tissue or fat that need to be trimmed). They're fairly thin, so they cook fast, and turn out beautifully with just simple preparation.

What's that prep?
Step one: dry brine. To do this, simply remove the steaks from the packaging, dry off the surface of the meat with some paper towels, then place on a rack on a sheet pan and dust with a light coating of Kosher salt. Once the steaks are dusted with salt, place them in the fridge for a couple hours (or, if you're planning on cooking them in the next hour, just leave them out on the counter).

That's it!

Now, let's get your grill fired up! Once your grill is ready, drop the steaks onto the grill. For my preferred level of doneness (and for looks), I cook them for ~ 2 minutes, then rotate 45 degrees and cook for another ~ 2 minutes. Then flip the steaks and cook for another ~ 2 minutes, then rotate 45 degrees and cook for a final ~ 2 minutes.

Once done, let the steaks rest for ~ 10 minutes.

Now, you're ready to slice and serve!

These steaks are delicious! Beefy, steaky flavors. Very tender (although more chew than a Prime filet, which, for me, is a good thing). They're the perfect combination of flavor and texture and value.
