Fresh Milled Flour High Protein Bread

I decided to increase my Protein intake and this is my take on the high protein bread. It is soft, tasty and no one will know it is high protein.

Makes a very large 13x4 pullman pan loaf or 10x5 loaf or two 8x4 pans

1 cup/240 g cottage cheese
1 egg
1 cup/245g high protein milk (I used Fairlife skim milk with 13 grams of protein per cup)
3 Tbsp/43g soft butter
1/4 cup/84g raw honey
**Blend well until all the lumps from the cottage cheese are smooth and no longer visible. Can be done with a blender, food processor or mixer

488 grams hard wheat berries ground into a fine flour
1/4 cup/30g Vital Wheat Gluten (optional, but makes a huge difference in the rise of the bread)
**Mix until the flour is moistened, cover and let the Fresh Milled Flour hydrate 30-60 minutes

Add 2 1/4 tsp/11g yeast
1 tsp./6g salt
**Knead 10 minutes

**Cover and let the dough rise 45-90 minutes, depending on the temperature of your home
**Shape and place in loaf pan, cover and let rise until it is 1 1/2 inches above the side of the pan.
**Bake for 40 minutes in a preheated 350ºF/175ºC oven - be sure the internal temperature reaches 200ºF, cool on a cooling rack and slice once completely cooled

The increase of protein comes from Fresh Milled Flour, Cottage Cheese, high protein milk and an egg
