Make Sweet Potato Lentil Soup in Just 30 Minutes
Ready in less than 30 minutes, this sweet potato lentil soup is a perfect one-pot recipe for cold winter nights. It's hearty, filling, and incredibly easy! Learn how to make this comforting plant-based winter soup—the ultimate quick vegan dinner for busy cooks
Ingredients
3 cloves of garlic
2 shallots
3 lunchbox peppers
2 carrots
2 sweet potatoes
1 cup of dried lentils
6 cups of vegetable broth
3 tbsp of tomato paste
2 tsp of onion powder
2 tsp of garlic powder
1 tsp of paprika
1 tsp of rosemary
1 tsp of thyme
1 tbsp of nutritional yeast
Parsley for garnish
Directions
1. Heat a large pot to medium high heat and drizzle in a small amount of oil.
2. Mince garlic and slice shallots, peppers, carrots, and sweet potatoes. Rinse and strain lentils and set aside.
3. Add garlic, shallots and peppers to pot and saute for 2-3 minutes. Add in carrots, sweet potatoes, lentils, vegetable broth, tomato paste, onion powder, garlic powder, paprika, rosemary, thyme and nutritional yeast.
4. Mix well and bring to a boil. Cook for approximately 15 minutes, or until sweet potatoes and lentils have fully softened. Remove from heat and let cool.
5. When ready to serve, portion and top with fresh parsley. Serve and enjoy!
