Winter’s around the corner, and I think everybody needs a kick-ass pot roast in their pocket! In this video, I’ll show you my favorite rustic pot roast recipe—made low and slow in a cast iron Dutch oven for ultra-tender beef, perfectly textured veggies, and a velvety, layered sauce guaranteed to warm your soul.

I walk you through every step: prepping fresh aromatics (garlic, onion, celery, rosemary, thyme, and bay leaves), searing the chuck roast to lock in moisture, and building an incredible sauce with beef broth, dry red wine, Worcestershire, tomato paste, and smoked paprika. I also share my best braising tips, like when to add the root vegetables for ideal texture and how a final splash of Dijon mustard takes the flavor up a notch.
