Buttermilk Rolls made with Fresh Milled Flour

These are my go to rolls for every holiday meal. However, we love them so much there are always some in our freezer for a great addition to any meal.

Buttermilk Rolls made with Fresh Milled Flour
-Mill 590 grams hard white wheat berries (I also use 50/50 blend of hard red and white berries) set off to the side

-2 Tablespoons/28g yeast
-1/2 cup/122g warm milk
-1 Tablespoon/21g honey
**mix and let the yeast bloom 5-10 minutes
-1 cup/242g buttermilk
-1/2 cup/111g very soft butter
-1/4 cup/84g honey
-3 eggs (about 165g)
-3 Tablespoons/25g Vital Wheat Gluten (optional, if you do not use have an equal amount of FMF to use in it's place)
**Mix
**Take about 1/2 cup of the flour you milled and keep it to the side.
-Slowly add the Fresh Milled Flour, keeping out about 1/2 cup
-1 1/2 teaspoon/9g salt
**After salt is added add the flour that was kept behind, one spoonful at a time
**Knead 8-10 minutes
**Cover and let rise 40-60 minutes
**Shape into 20-24 rolls, cover and let rise 40-60 minutes
**Preheat the oven to 350ºF/175ºC Bake for 20-25 minutes
