Roast Beef Dipper on the Blackstone Griddle

Ingredients
2 teaspoons avocado oil
2 teaspoons butter
½ yellow onion, sliced
1 bell pepper, sliced
½ cup sliced mushrooms
1 teaspoon Blackstone Essential Blend seasoning
¼ cup mayonnaise
2 tablespoons prepared horseradish (adjust to taste)
1 (16 oz) package Hillshire® Farms roast beef
4–6 slices Swiss cheese
4–6 slices provolone cheese
Hoagie buns of your choice
Optional: au jus for dipping

Instructions
1. Preheat your griddle to low heat, then add avocado oil and butter.
2. Add the sliced onion, bell pepper, and mushrooms. Sauté until tender but still slightly crisp.
3. Season the vegetables with Blackstone Essential Blend.
4. In a small bowl, mix the mayonnaise and prepared horseradish to make the sauce. Set aside.
5. Slide the cooked vegetables to the cooler side of the griddle.
6. Add the Hillshire® roast beef to the griddle and warm it through.
7. Top the warmed roast beef with the sautéed vegetables, then layer on the Swiss and provolone cheese.
8. Combine the meat, vegetables, and melted cheese like a cheesesteak, then cover with a dome to finish melting.
9. Toast the hoagie buns on the griddle until warmed and lightly crisp.
10. Place the buns directly on top of the cheese-covered beef mixture to steam and soften.
11. Remove from the griddle, transfer to a cutting board, and slice. Spread the horseradish mayo inside each bun.
12. Serve warm, with au jus on the side if desired.
