Easy Weeknight Meals: Sweet and Sour Chicken
Taylor serves up an easy weeknight sweet and sour chicken that comes together fast with fresh veggies, crispy chicken, and a simple pre-made sauce. She wraps it all up with jasmine rice and toppings that make this dish taste better than takeout. A quick, delicious meal your whole family will love.

Ingredients
1½ lbs boneless, skinless chicken thighs
Blackstone Essential Blend
Pre-made jarred sweet and sour sauce
Avocado oil
1 red bell pepper, chopped into bite-size pieces
1 yellow bell pepper, chopped into bite-size pieces
1 cup broccoli florets
1 onion, diced
Uncle Ben’s microwavable jasmine rice
Green onion, sliced (for garnish)
Toasted sesame seeds (for garnish)
Directions
1. Chop the chicken thighs into bite-size pieces. Season with Blackstone Essential Blend or salt, pepper, and garlic powder. Add oil to the griddle and sauté the chicken until fully cooked.
2. Add the peppers, broccoli, and onion to the griddle with a little oil. Add a splash of water and cover with a dome (or close the griddle lid) to steam for 1–2 minutes, until the broccoli turns bright green. Season the vegetables with Essential Blend, toss, and let them finish cooking.
3. Toss the chicken again and continue cooking until crisp and fully done.
4. On low heat in the center of the griddle, add the microwavable rice with about ¼ cup of water. Toss until the rice is warmed through.
5. Spoon the hot rice into a bowl or onto a plate.
6. Mix the cooked chicken and vegetables together on the griddle. Pour enough sweet and sour sauce over the mixture to coat everything evenly, then toss until fully coated.
7. Plate the chicken and veggie mixture next to the rice. Garnish with sliced green onion and toasted sesame seeds.
