400 g frozen spinach, thawed and drained

2 tbsp butter (about 30 g)

2 tbsp plain flour (about 20 g)

500 ml milk

150 ml double cream (optional, for extra creaminess)

100 g grated cheese (Parmesan, mozzarella, or Gruyère)

Salt, to taste

Black pepper and nutmeg, to taste (optional)

Method: Combine butter and flour to make a roux, gradually whisk in milk, then stir in cream and cheese until smooth. Fold in the spinach and season to taste. Serve hot and enjoy!
