Orange Cranberry Nut Bread is both Festive and Delicious!!
Gail's Orange Cranberry Bread Recipe:
2 Cups AP Flour
1 1/2 Tsp Baking Powder
1/2 Tsp Baking Soda
1/8 Tsp Salt
1 Tsp Cinnamon
1/2 Tsp Nutmeg, optional
1 Cup Sugar, I substitute Brown Sugar for ½ Cup
1 Cup Chopped Fresh or Frozen Cranberries
1/2 Cup Coarsely chopped Pecans
1/2 Cup Golden Raisins
1 TBSP Grated Orange Peel, I use zest from one orange
4-5 TBSP Butter, melted & slightly cooled (a generous 4 TBSP)
3/4 Cup Orange Juice or milk
2 Large Room Temperature Eggs
1 Tsp Vanilla
Optional Orange Glaze, per loaf:
1/2 Cup Powdered Sugar
2-3 TBSP Orange Juice, depending on desired consistency

Directions:
Preheat oven to 350 degrees. Lightly grease loaf pans.
In a large bowl, whisk together flour, baking powder, soda, salt, spices, and sugar.
Stir in cranberries, raisins, pecans and orange peel.
In a separate bowl, mix the butter, milk or juice, eggs, and vanilla.
Stir into the flour mixture, just until moistened. Spoon into loaf pans.
Bake for 45-50 minutes for smaller loaves or 60 minutes for one large loaf.
Cool in the pan for 10 minutes before removing to wire rack to cool.
