It’s those annual sabbath days or annual feast days such as the feast of unleavened bread, the feast of weeks, the feast of trumpets, and others, which were shadows of things to come as they pointed to Christ’s first coming. It’s in those feast days or annual sabbath days where people were judged in matters of food or drink as on the Day of Atonement, for instance, it was a day of fasting thus, you were not allowed to eat on that day. Again, Colossians 2:16-17 has absolutely nothing to do with the weekly 7th day Sabbath which is a commandment of God, which MUST BE KEPT like all other nine commandments as it is our duty as a follower of Christ to keep them as per Ecclesiastes 12:13.
