LINZER COOKIES🎄🍪 (traditional Christmas cookies)

350 g flour
1 egg (or 2 egg yolks)
180 g butter 82%
100 g powdered sugar
1 tsp baking powder
10 g vanilla sugar
100 g almond flour (ground almonds)
100 g thick jam

Combine all ingredients and knead the dough.
Divide into 2 parts and refrigerate for 1-1.5 hours.
Roll out the chilled dough between 2 sheets of parchment paper and cut out the cookies.
Be sure to leave them on the parchment paper and remove the leftover dough.
Bake in an oven preheated to 180°C for 10-12 minutes until lightly browned.
It is important not to overcook the cookies, as they will become very brittle.
Cool on a wire rack, spread with jam, and sandwich two cookies together.
