CHRISTMAS KALACH 🎄
(23 cm mold)

150 ml milk 2.5%
50 g butter 82%
1 tbsp vegetable oil
1 egg
70 g sugar (+ 1 tbsp for the dough)
6 g dry yeast
10 g vanilla sugar
1/2 tsp salt
340 g flour (+1 tbsp for the dough)

50 g blue raisins
50 g white raisins
30 g cranberries
sesame seeds or poppy seeds for sprinkling

For the starter
Combine warm milk with sugar, yeast, and flour, cover, and leave in a warm place to activate.

Combine the egg with sugar, vanilla sugar, and salt, beat well, and add to the starter.
Add sifted flour and mix.
Add the softened butter and sifted flour and knead the dough.
It should be soft and elastic.
Cover and leave in a warm place to rise.
I put it in an oven preheated to no more than 50°C.

Divide the dough into 3 parts, 1 of which should be small.
Roll out into a thin layer, add raisins, twist into tubes, twist them together, form a kalach, and pinch the edges well.
Add cranberries to the small part of the dough, form a ball, place it in the middle of the mold, and connect all parts of the dough into the shape of a kalach.

Cover the kalach and leave it in a warm place to rise until doubled in size.
Brush with egg, sprinkle with poppy seeds or sesame seeds, and bake in an oven preheated to 180°C for 40 minutes.
Check for doneness with a dry skewer or toothpick.
Carefully remove from the mold and cool on a wire rack.
