Ingredients
1 cup red lentils
1 onion
3–4 tablespoons vegetable oil
1 carrot
1 potato
5 cups hot water (1 liter)
1 cup hot chicken stock (200 ml)
1 teaspoon salt
For topping:
1 tablespoon butter
1 teaspoon red pepper flakes
Instructions
Grate the carrot using the coarse side of a grater and cut the potato into small cubes. Finely chop the onion.
Heat the oil in a pressure cooker, add the onion, and sauté until slightly softened. Add the carrot and potato and stir well.
Add the washed red lentils and salt, then pour in the hot water and hot chicken stock. Stir to combine.
Close the lid and once the soup starts to boil, cook for 10 minutes.
After cooking, blend the soup until smooth and creamy.
For the topping, melt the butter, add the red pepper flakes, and heat briefly.
Serve the soup hot, drizzled with the butter sauce.
