Smoked Pork in a Brinkmann Offset

This was my first time using my Brinkmann offset smoker. Pork loin is a great meat to learn and test with. It isn't as temperamental as brisket, but also not as easy or forgiving as pork butt. The most critical element to smoking pork loin is to not over cook it.
