Keto Beef Pot Pie Experiment

What could be better on a chilly day than a lovely baked pot pie? How about a keto version to help you keep those New Year resolutions!

This experiment involves using the recipe from Cary Kelly on X for keto "dough" that is seasoned and then placed on top of seasoned, cheesy ground beef. Delish!

Keto Dough:
2 eggs (mixed)
2 cups dehydrated butter powder
1/2 teaspoon chipotle powder
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon Complete Seasoning (Badia)

Filling:
36 oz ground beef (I used 90/10)
1 onion, diced
4 cloves garlic, squished
~ 2 ounces chipotle in adobo sauce
~ 2/3 cup beef broth
~ 2 cups shredded pepper jack cheese
2 eggs, mixed
1 cup heavy cream
salt and pepper to taste

Mix up dough and chill in fridge.
Brown ground beef over medium high heat until ~ 1/2 way cooked through
Add onion and mix. Cook until onion is translucent.
Season with salt and pepper.
Add in chipotle and mix.
Add in garlic and cook for ~ 1 minute, then mix in
Once beef is nearly totally cooked, add in broth and mix.
Add in cheese and mix
Remove from heat.
Mix eggs and cream together, then add to the beef. Mix well.

Roll out dough until it's about the size of the pan.
Drop in crushed pork rinds to make a thin layer on the bottom of the pan.
Add beef mix.
Top with dough.
Bake in oven for ~ 30 minutes or until the top is golden brown and delicious!

Let cool for a couple minutes to allow the ingredients to come together.

Serve and enjoy!
