Fresh Milled Flour Pasta and Philips Pasta Maker

When I started off making homemade pasta I mixed the dough, rolled it out and hand cut the pasta. Then I moved to a hand crank machine and now I have a Philips pasta machine.

Philips Pasta Machine Recipe- makes 1 1/2 pounds of pasta
500 grams Fresh milled flour (I used Durum wheat)
200+ grams liquid (I used two eggs and water to reach 200g)
**add more water 1 Tablespoon at a time until the correct texture is reached, I usually add 2-3 Tbsp. water to reach correct texture
**Stop/pause the machine and let the flour hydrate 10 minutes. Then, remix and extrude the pasta
**Use Semolina flour to dust the pasta, so it doesn't stick together.
**If not using right away, freeze the pasta. I divide my pasta into meal sized portions, freeze and they are ready for future meals
**Boil water, add a good amount of salt and drop the fresh or frozen pasta into the water. Boil 3-4 minutes, drain and enjoy

Pasta Recipe for hand crank machine & hand rolled pasta
500 grams Fresh Milled Flour
225+ grams liquid (I do 2 eggs and water to equal 225 grams)
**I always mix mine in a food processor, mix until it forms a solid ball. Cover and place in a refrigerator to hydrate 1 or more hours.
**Roll out by hand or use the manual machine to to roll out the dough. Use plenty of extra flour to keep the dough from being sticky. It should not be sticky at all
**Cut the pasta, dust with semolina flour to keep the pasta from sticking.
**If not cooking right away, package and freeze. Can be made straight from frozen
**Boil a large pot of water, add salt, add fresh or frozen pasta and boil 3-4 minutes, drain and enjoy
